Cucumbers are good for vegetarians. It contains 95 per cent of water
and other vital nutrients. Juicing the cucumbers helps to cool the body
during summers and also provides us with nourishing benefits. Avoid
buying cucumbers that are yellow, puffy, have sunken water-soaked areas
or are wrinkled at their tips.
Thinner cucumbers will generally have less seeds than those that are
thicker, so they are better for juicing. While many people are used to
purchasing cucumbers that have a waxed coating, it is highly recommended
to choose those that are unwaxed, so that the nutrient-rich skin can be
blended in a juice without consuming the wax and any chemicals trapped
in it.
Make sure you wash your cucumber before chopping and juicing as the
cucumber skin is sometimes covered in an edible wax to prevent moisture
loss.
Ingredients: 5 cucumbers , ¼ cup sugar, 120 ml water
Preparation
Wash the cucumber in salted water. Peel and keep the skin aside.
Divide into segments and put in the blender or juicer.
Add 50ml water and grind until it becomes liquid.
Heat 50ml of water in a pot and sugar if you want extra sweetness.
Boil until the sugar completely dissolves in the water. Mix the
sweetened water with cucumber juice. Simmer for 5 minutes.
Blend the skin with 20ml water. Add to the sweetened water and stir well.
Pour in a strainer to separate the juice from chaff.
Pour into a pitcher and refrigerate.
Serve chilled, and garnish with cucumber slices.
